Lasagna Cups

A few weeks ago, I shared my Mexican Wonton recipe.

I wanted to try this with an Italian twist. and boy was it yummy!

You will need:

  • 1lb Italian sausage browned and drained
  • 1 package wontons
  • 1 12oz ricotta
  • 1 cup shredded mozzarella
  • spaghetti sauce- I used tomato, garlic and basil, but this is really your preference
  • 1/2 cup Parm cheese
  • garlic, oregano and pepper to taste
  • 1 egg
  1. Preheat oven to 375 degrees F
  2. Grease 2 muffin pans
  3. Mix the sausage, ricotta, egg, and other seasoning together in a bowl. add the amount of sauce you desire. (I did about 1/2 cup)  set aside
  4. Place the wontons first in a square and then in a diamond shape. press in the muffin panIMG_4918
  5. Spoon a small amount of sauce into each cup. then spoon in the mixture filling about 3/4 of the way full. Top each cup with shredded mozzarella
  6. Bake for about 10-12 min, the sides will be a golden brown.
  7. Enjoy~


Mexican Wontons


Mexican Wontons

I wanted to try something a little New, for the New Year. With a little experimenting I’m pretty happy with how these Mexican wontons turned out.

  • 1 package of wonton wrappers
  • 1 can of black beans, drained
  • 1 lb of ground beef, browned and drained
  • 1 package taco seasoning
  • 1/2 cup finely chopped onions
  • 1/2 cup finely chopped green peppers
  • 1/4 cup finely chopped jalepenos
  • 1 bag of shredded Mexican blend cheese
  • 2 large eggs

Preheat oven to 375 degrees F. Grease 2 muffin pans. Place one wonton wrapper over muffin pan, then another using opposite corners.

Mix all ingredients together in a bowl, save 1/2 cup of cheese to top.

Spoon the mixture into the wontons. I filled mine half way.

Top with remaining cheese and bake for 10 min or until golden brown.

Serve with sour cream and/or salsa and enjoy!
