Valentine’s Hugged Pretzels | The Random Arrow

Happy Valentine’s Day!

I can remember making these treats as a kid, so I decided to share the love with my 4 year old, who has become obsessed with helping mommy in the kitchen.  These Hugged Pretzel’s are the perfect combination of salty and sweet.

You will need:

  • 1 bag of Valentines M&M’s
  • 1 bag of Snyder’s Butter Snap Pretzels
  • 1 bag of Hershey’s Hugged Kisses
  1. Pre heat oven to 300 degrees F.
  2. Line a baking sheet with wax paper.
  3. As oven preheats, neatly place pretzels on baking sheet. (I used a 15″ pan, so I used almost half a bag of pretzels.)
  4. Count how many pretzels you used and unwrap that many Hershey’s Hugs.
  5. Place in oven for 2 1/min.
  6. Pull pan out of oven and let sit for less than a minute.
  7. Gently press M&Ms into the Hershey hugs.
  8. Place in refrigerator for about an hour.
  9. Store in an air tight container.
  10. Enjoy!

Chocolate Fudge Recipe

My friend shared this recipe with me last year, after several failed Pinterest attempts to make fudge.

O.M.G. is it easy, and so delicious! Who doesn’t love some good ole fashioned fudge! I enjoy making this recipe around the holidays and sticking some pieces in the cookie tins I give away to people. It’s genius really, because I would sit and eat the entire pan, haha!

You Will Need:

  • 1/2 cup evaporated milk
  • 1/2 cup margarine
  • 20 large marshmallows
  • 2 1/4 cup  sugar
  • 12 oz bag chocolate chips
  • 1 teaspoon vanilla
  1. Combine evaporated milk, margarine, sugar, and marshmallows in a sauce pan and bring to a boil.
  2. Boil 5 minutes constantly, low heat. stir frequently.
  3. Remove pan from heat.
  4. Add bag chocolate chips and vanilla
  5. Stir well and pour into buttered 8×8 pan
  6. Let cool completely, and cut into squares
  7. Enjoy!

Maybe you could leave some out for Santa this year!!

Walnut Chocolate Chip Banana Bread

Walnut Chocolate Chip Banana Bread

 

Banana Bread is one of the most simplest breads to make. The combination of chocolate and banana’s is one of my favorites. Actually anything with chocolate is right up my alley!

This recipe yields 2 bread loaf pans. If wanting to make 1 pan just half the recipe. You can also freeze a loaf and save it for later.

You will need:

  • 5-6 over ripe banana’s
  • 2/3 cup  melted butter
  • 2 cups sugar
  • 4 eggs beaten
  • 3 cups flour
  • 2  tsp baking soda
  • 2 tsp vanilla extract
  • 2 tsp cinnamon
  • 1 bag of chocolate chips
  • 1 bag of finely chopped walnuts
  1. Preheat oven to 350  degrees F
  2. Mix all dry ingredients into a bowl.
  3. Add eggs, butter and vanilla extract
  4. Stir in chocolate chips and walnuts.
  5. Spray pans with Pam non stick cooking spray.
  6. Bake for 30 minutes
  7. Allow bread to cool before cutting.
  8. Enjoy!

Spicy Salsa Recipe

Spicy Salsa

Chips and Salsa is one of my all time favorite snacks. For me the spicier the better! As the warmer months are approaching Salsa is a delicious and super easy appetizer you can serve at your next shin dig or your next taco night.

You will need:

  • 4 roma tomatoes
  • 2-4 jalapeños
  • 1/2 cup chopped cilantro
  • 1/2 cup chopped onion
  • 2 tbsp garlic
  • 1 tsp salt
  • 1 tsp onion powder
  1. boil tomatoes and jalapenos for 12 min or until soft. (I used 4 jalapenos in this recipe, so if you want less of a kick use 2) set aside and let cool completely
  2. in a food processor or mixer combine all ingredients
  3. let chill for 2 hours before serving
  4. Enjoy!!!

Kale Smoothie

Ok so I know what your thinking.. Kale? really? and my answer is yes!

I am a huge fan of smoothies. They are a great on the go breakfast. After reading an article a while back, I learned that adding about a cup of kale to your smoothies can really pack of punch. Kale has so many health benefits (Click here to learn more). Even though I’m a fan of this green magic, I prefer to consume it sautéed and with hot sauce. But since I am open to trying new things I decided to add it to one of my favorite smoothie recipes, peanut butter and banana. And the good news is besides the color, I hardly noticed any change to the flavor.

You will need:

  • 1 frozen banana
  • 1 cup coconut water or milk
  • 2 tbsp of peanut butter
  • 1 cup kale
  • 2-3 ice cubes (optional)
  • 1 scoop protein powder (optional)

Blend on high-speed until all mixed together.

Enjoy, and try not to get pinched today!

Peppa Pig Party

As Daddy Pig would say, “I’m a bit of an expert” when planning parties.

Ok so no, not really, but I do love parties, and planning them can be fun. For my daughters second birthday, I decided to go with a Peppa Pig theme since at the time Peppa was her favorite!

On the invite I requested for all the cheeky little “piggies” to wear  their best rain boots, just as Peppa Pig does. For jumping in muddy puddles of course! I cut out some brown felt in the shape of puddles so the kids could pretend to jump.

All the food was pig themed. Pulled Pork BBQ, Pigs in a blanket, “Ham”and cheese sandwiches, “Curly tail” salad. You get the point.peppa3

For the favors I made “muddy puddles” which was dirt pudding. I purchased some mini mason jars from Wal-mart and tied little wooden spoons to them. I was a bit disappointed that I forgot to save myself one, but glad that everyone enjoyed them!peppa4

Here’s my personal recipe for Dirt Pudding

  • one package of chocolate instant pudding. prepare as package instructs
  • crushed oreos. I mix half in with the pudding and use the other to top.
  • 1 bag of gummy worms
  • 4 oz of cream cheese
  • 4 oz of cool whip

I purchased a lot of the supplies and decorations from Amazon.com. and Etsy. I used little buckets and some foam to have the Peppa “sticks” spread throughout the house. I also used some toys that my daughter already owned to add to the decorations. The Peppa Pig house and all the characters were spread out on different tables. Since she was such a huge fan she got a lot of Peppa stuff for Christmas. I used a pair of Rain boots to put some baby’s breath in that made nice centerpieces for the tables. I also made little piggy noses that the kids, and adults could play with to!peppa7

I find baking to be fun but when it comes to cake decorating I’m basic. SO my wonderful co-worker made me a small cake, and cupcakes for the guests. She did an amazing job. You can see below that the birthday girl agrees!

Classic Cheesecake Recipe

I’m such a sucker for cheesecake. Its the perfect dessert. Not overly sweet, and a small amount will leave you satisfied. Cheesecake is also the perfect dessert to have when chatting with your best gal pals! (hence the Golden Girls)

Here’s my delicious cheesecake recipe, it’s super easy!

The Crustclassic cheesecake

  • 2 cups  crushed graham crackers- approximately 32 squares
  • 1 stick butter melted

Combine finely crushed graham crackers and melted butter with a fork. In a greased 8 or 9″  pan*, press crust starting at the center and work your way out.  Then press the crust onto the side of the pan. Refrigerate for 30 min

The fillingclssic cheesecake

  • 3 8 oz packages cream cheese** softened
  • 3 large eggs
  • 1 cup sour cream
  • 1 cup sugar
  • 1tsp vanilla

Pre heat oven to 325 degrees F.

Using a mixer combine all cream cheese, then add eggs. Slowly add sugar. Once combined and smooth, add sour cream and vanilla. Pour the filling into the crust and bake for about 45 min. The top will be jiggly but will firm as it cools. Let the cheesecake cool for 30 min. Refrigerate for at least 3 hours before serving

**I strongly suggest using Philadelphia cream cheese. and using the kind that actually comes in the box not the tub. I’ve tried using the different variations and this kind  doesn’t cause the cheesecake to crack on the top.
*I recommend using a spring form pan, but a cake pan or even a pie plate will work fine

5 Christmas Morning Breakfast Idea’s

Itgood morning‘s Christmas Morning! Aside from all the excitement from Santa Coming, What better way to wake up than with a delicious breakfast! I wanted to share some simple recipes with you that are sure to please the whole family.

1. Crockpot Breakfast Casserole- This is so great because you wake up to breakfast and your house smelling amazing!

  • 1 lbs sausage cooked and drained
  • 1 pack of bacon, cooked, drained and chopped
  • 8 eggs
  • 1 bag shredded cheese
  • 1 bag frozen hash browns. *you can substitute this with 3 small regular potatoes-chopped*
  • 1/2 onion chopped
  • 3/4 cup milk
  • 1 tbsp. garlic
  • 1 1/2 tsp. pepper
  • 1 1/2 tsp. salt

In a large bowl, beat eggs, milk, garlic, pepper, and salt until well blended. Set Aside.
Layer potatoes, bacon, sausage and cheese, sprinkling with salt and pepper to taste.
Pour egg mixture on top.
Top with remaining cheese,  set to low cook for 8 hours.

2. Toast with honey butter spread- Toast is always a favorite in my house. Making the honey butter spread is easy and can be done in a few seconds.

  • 1/2 stick butter softened
  • 1 tbsp. honey
  • 1 tsp cinnamon

3. Omelet- I have always enjoyed cooking omelets, and the great thing is that you can customize them how ever you want. My personal favorite has spinach and onions.

  • 3 large eggs
  • 2 tbsp. milk
  • 1 cup shredded mozzarella
  • 2 handfuls of spinach
  • tbsp. butter
  • 1 tbsp. minced garlic
  • 1 tbsp. salsa (optional)
  • salt and pepper to taste

Melt butter, add onions and garlic, sauté for a few min then add spinach. Once spinach is done set aside.
Spray a skillet with nonstick cooking oil.
Mix eggs, salt, pepper, and milk in a bowl, pour into skillet cook on medium heat.
Once eggs are done add spinach and 3/4 cup cheese to one side, flip up other side.
Cook, until cheese is melted, flipping occasionally top with remaining cheese, and salsa.

4. Stove Top Apples- This is one of my favorite breakfast dishes. It pairs nicely with toast, pancakes or oatmeal.

  • 2-3 granny smith red apples
  • 1-2 tbsp. butter
  • 1/4 cup sugar
  • 1/4 cup brown sugar
  • 1 tsp cinnamon

Wash, peel and core apple’s.
Melt butter, add apples cover and cook on a med heat for about 10 min.
Add sugar, brown sugar and cinnamon.
Stir and cover for another 5 min, stirring halfway.
Cook to desired consistency. I usually like mine to be more tender so I cook a little longer.

5. Sausage Balls- these are so delicious and can be prepped the night before if need be. I’m a huge Paula Dean fan in the kitchen so I follow her recipe, which you can find here

Roasted Red Potatoes

Potatoes. I love all the different ways you can cook potatoes, but my very favorite way is to roast them in the oven. Roasted Red Potatoes are a great side dish for practically any meal. Try this recipe out the next time you decide to make potatoes. It won’t disappoint!

you will need:

  • 2-3lbs red potatoes
  • 2 tablespoon olive oil
  • 2tbsp garlic*
  • 1tsp salt
  • 1 1/2 tsp pepper
  • 2tbsp cayenne pepper*

*these measurements can vary. I LOVE spice so I usually add a lot of cayenne pepper and garlic.

  1. Preheat oven to 400 degrees F
  2. Wash and quarter the potatoes
  3. Using a Ziploc bag, put the potatoes in the bag and add olive oil. Then add your seasonings.
  4. Seal the bag and mix the ingredients together. Make sure all the potatoes are covered.
  5. Bake for about 45 min
  6. Enjoy!!! I like to serve with ranch dressing, YUM!

Homemade rolls recipe

Does anyone else out there LOVE bread? For my birthday this year my husband bought me a bread maker aka best gift ever! I use it all the time! Its nice because it has different settings and one of those settings is for making dough. Since then I’ve been experimenting with recipes for making homemade rolls. By far this has been the best one!

no bread maker? no problem-try using the dough hook on your mixer or knead by hand.

You will need:

  • 1 cup milk
  • 1 egg *I use an egg substitute due to an allergy
  • 3 cups bread flour
  • 4 Tbsp sugar
  • 1 tsp salt
  • 1/4 cup of butter-room temperature
  • 1-1/2 tsp rapid rise yeast
preheat oven to 375 degrees F

Mix all the ingredients together in a large bowl. When it comes to bread the most important thing to do is to let it sit and rise. I recommend letting it rise for 30-40min. It should almost double in size.

Grease 12 muffin cups. divide the dough and roll into balls. Cover the dough and let it rise for about 20 more minutes.

bake in preheated oven for 10-15 minutes. Every oven varies, so I recommend setting a timer for 10 min and checking The outside of the rolls should be a light brown when they are done.
